Herb Flavored Oils

Make herbal oils in smaller amounts since oils don’t have the same purification qualities as vinegars. Place herbs in sterilized bottles with non-metal caps and add oil. Keep in cool dark place for 2 weeks, strain, and re-bottle. Refrigerate and then warm to room temp. before using.

Herbs de Provence Oil

  • 2 sprigs fresh rosemary
  • 1 sprig fresh thyme
  • 2 garlic cloves
  • 2 sprigs fresh oregano

Basil Oil

  • 1 cup tightly packed fresh basil leaves
  • 1 cup best quality olive oil
  • Blanch basil leaves for 2 min.. Squeeze dry. Place leaves and 1/2 of the oil in a blender. Blend until smooth. Gradually add remaining oil. Pour into glass jar, cover and steep for at least a day at room temp.. Refrigerate

Sage Oil

  • 1/2 cup fresh sage leaves
  • 1 cup extra-virgin olive oil
